My clever sister in law actually put me onto this idea. These veggie patties are great for kids: they cook in 3-4 minutes, make a good snack for the kids or part of a meal for the whole family, plus you can freeze them annnnd they are seriously yummy. Here’s how you make Crispy Veggie Cakes:
- 1 Sweet Potato, grated
- 1 Small Onion, finely diced
- 1/2 Cup Corn kernels, fresh or tinned
- 1 Cup Zucchini, grated, tightly packed
- 1 Tbsp Chives (optional)
- 1 Tbsp Parsley (optional)
- 1 Cup Wholemeal flour
- 1 tsp Baking Powder
- 1 Egg
- 1 Cup Milk
- 2 Tbsp Coconut Oil (or any kind of oil)
In a large bowl combine sweet potato, onion, corn, zucchini, chives, parsley, flour and baking powder. In a small bowl whisk egg with milk, then combine with dry ingredients. Add coconut oil to a hot pan. Spoon tablespoons of mixture into the pan and cook for 2-3 minutes on each side.
These veggie cakes are a great way to get your children eating veggies. Sweet potatoes are a good source of fiber as well as iron, calcium, vitamin B, and vitamin C. They are also a rich source of the antioxidant beta-carotene. Once the sweet potato is cooked the level of beta-carotene is reduced however the vitamin C is enhanced.
